With a decade spent in the Michelin-starred kitchens of Paris and Kyoto, Karim Benali returned to his roots in Algiers to define a new era of North African gastronomy.
His approach is monastic in its discipline and radical in its execution. He believes that the essence of a dish is found not in complexity, but in the subtraction of the unnecessary.
Karim was named Best Chef in Algeria two years running, a testament to his obsession with the perfect union of fire and flavor.
